Five ways to cook with dark honey

Dark honeys such as buckwheat carry malt and molasses notes that disappear entirely under a light drizzle. Give them heat and salt instead.

1. Roast carrots and thyme

Toss carrots with olive oil, salt and a tablespoon of dark honey. Roast hot until the edges catch, then scatter thyme off the heat.

2. A glaze for anything grilled

Equal parts dark honey, soy and cider vinegar, brushed on in the last few minutes so it does not burn.

3. Sharp cheese

Spoon it straight beside a hard, salty cheese. The bitterness in the honey does the work a chutney usually does.

4. Morning oats

Stirred through oatmeal with a pinch of sea salt it tastes closer to gingerbread than to plain sugar.

5. A soothing mug

A spoonful in warm, not boiling, water with lemon. Boiling water flattens the aroma. (Not for babies under 12 months.)
