From flower to bottle: how raw honey is made and harvested
According to the National Honey Board, bees must visit around two million flowers to make a single pound of honey, flying more than 55,000 miles to do it. The average worker bee makes about 1/12 of a teaspoon in her whole life. Every bottle is the work of an enormous number of bees. Here is how it happens.
1. Foraging
Forager bees collect nectar from flowers and carry it back to the hive in a special honey stomach. Along the way, they pick up pollen on their bodies, some of which ends up in the honey. That pollen is what gives raw honey its fingerprint of the local landscape.
2. From nectar to honey
Fresh nectar is mostly water, often 70–80%. House bees pass it between them, adding enzymes that break down sugars, then spread it thin across the comb cells and fan it with their wings to evaporate the water. When the moisture drops to roughly 16–18.5%, it has become honey.
3. Capping
Once a cell of honey is dry enough, the bees seal it with a thin lid of fresh beeswax. The cap is the bees telling the beekeeper the honey is ready. It matters: honey with too much water can ferment, and the USDA standard for Grade A honey requires moisture at or below 18.6%. Beekeepers generally wait until most cells on a frame are capped before harvesting.
4. Uncapping and extraction
The beekeeper lifts out the capped frames and slices or scratches off the wax cappings. The frames go into an extractor, a drum that spins them so centrifugal force throws the honey out of the cells while leaving the comb intact, ready for the bees to refill.
5. Straining and settling
Fresh-spun honey passes through a mesh strainer to catch bits of wax, then rests so air bubbles and any tiny particles rise to the top. That is the only cleaning raw honey gets. No heat, no pressurised fine filters.
6. Bottling
Finally the honey goes into bottles, exactly as it came from the comb. That is what the words on our label mean: pure, unfiltered, raw local honey.
